Ingredients
- 1 rotisserie chicken
- 2 ribs celery
- 2 medium carrots
- 2 medium onions
- 2 bay leaves
- ½ tsp dried rosemary
- ½ tsp dried thyme
- 10 whole peppercorns
- 8 cups cold water
Directions
- Cut the celery, carrots, and onions into large chunks (if there are celery leaves, keep them on).
- Pool the rotisserie chicken, separating the edible meat and the carcass.
- Add the chicken carcass, chicken skin, vegetables, seasonings, and water to a large stock pot. Slowly bring up to a boil over medium heat.
