Chicken Soup

Ingredients

  • 1 rotisserie chicken
  • 2 ribs celery
  • 2 medium carrots
  • 2 medium onions
  • 2 bay leaves
  • ½ tsp dried rosemary
  • ½ tsp dried thyme
  • 10 whole peppercorns
  • 8 cups cold water

Directions

  1. Cut the celery, carrots, and onions into large chunks (if there are celery leaves, keep them on).
  2. Pool the rotisserie chicken, separating the edible meat and the carcass.
  3. Add the chicken carcass, chicken skin, vegetables, seasonings, and water to a large stock pot. Slowly bring up to a boil over medium heat.
